For the Love of Coconut Milk

It’s no secret that I’m having a love affair with coconut milk recently (see post here for a refresher). Coffee, tea, cereal, shakes… all better with coconut milk. Unfortunately, there is only one brand that makes an unsweetened variety. Alex and I discovered this weekend the only store within a 5-mile radius of our house that carries said brand is the Fred Meyer on Hawthrone (for all you non-Portlanders out there this is a store we don’t get to regularly). We know this because we went to: Fred Meyer on 82nd and Trader Joe’s looking for it. I already knew Safeway and the other Fred Meyer near us didn’t carry it either. So, since I’ve been consuming at least one carton a week, it was time to move on to plan B.

        

Plan B was a bit of trial and error. I mixed two cans of Trader Joe’s low-fat coconut milk with four cans of filtered water. Next came four teeny tiny scoops of stevia and then I mixed it all up. The result… an even better and MUCH cheaper batch of coconut milk! The other brand I’d been getting ranged between $3.50-$4.50 per carton. My new version cost about $2, since we already had the stevia. The best part is our homemade milk actually tastes even better! More coconutty (I’m pretty sure that isn’t a real word). It took about 10 minutes of us second guessing our math skills, but we calculated each cup has about 55 calories. This is about the same as the unsweetened store-bought which had 50 calories. Now I can use it without feeling like I have to ration it out. Not too shabby!
